Tonight we're having a Tex-Mex night including nachos, chicken and shrimp fajitas, salad, and dessert. This may be a meal I repeat so I wanted to write down the steps:
- Make the Pico de Gallo
- Prep the refried beans
- Slice the peppers and onions
- Prep the sauces
- Prep the Guacamole
- 4ish Prep the beef, shrimp, sheet pans w/sauces, heat oven
- 5:30 put together the nachos/warm up
- 6:00 roast the peppers/chicken sheet pan, roast peppers/onions for shrimp sheet pan
- 6:20 add shrimp to shrimp sheet pan
- Turn oven to warm, 6:30 slice chicken, heat wraps in microwave
- 6:45ish serve dinner
For serving

- start with the nachos - serve on a big platter and offer little plates, forks, napkins
- Offer beer, wine, margaritas, water, seltzer
